This is the estate’s 'village' wine, as it is made from front selected from younger blocks, ranging in age between 5-15 years, in Morstein and Brunnenhäuschen vineyards. The grapes are selectively hand harvested before undergoing a brief maceration (6–12 hours). The grapes are then gently pressed and meet native yeast fermentation in large, neutral oak casks. The wine is then matured on the lees for 10 months with no bâtonnage before being bottled with no fining and only light filtration. Rich in mineral tones, this wine shows the great potential of these tops sites.
Aromatically the wine is leaping from the glass with notes of ripe papaya, pineapple, honeydew, and flint. The palate is extremely acid-focused with notes of cold steel and white rock, as well as a balancing flavor of candied orange peel.
