TOR Wine's Noble ROT is made in style of one of the most labor-intensive, difficult wines to make in the world. So far the only vintages that have been made have been 2006, 2008, and 2014. Made with the model Chateau d'Yquem in mind, this Semillion- Sauvignon Blanc blend is handpicked and barrel fermented. It is then aged in small barrels. For grapes to have 'noble rot' the must be infected with botrytis. Botrytis spores are encouraged during a warm and humid fruit towards the end of harvest but are extremely difficult to hone in on. The bacteria cause water loss, dehydration and an extreme concentration of the grape. It creates soft raisins covered in a blanket of brown fur, and become so delicate they often need to be harvested berry by berry.
Aromatically this viscous wine is enticing with notes of honeysuckles and sweet stone fruits. On the palate, the wine is immensely complex, with ripe apricots, oxidative yellow apples, sweet caramel, and a lingering note of toasted nuttiness.
