Palisades Vineyard, originally known as 'Carver Sutro', is nestled in a secluded little valley of its own just east of Calistoga. Records date it back to pre-prohibition in regards to wine-making as well as rumors of moonshining during prohibition, making this elusive vineyard a bit of a historic hidden gem. The Petite Sirah is fully destemmed before undergoing an 11-day fermentation in a single open-top tank. The grapes are then pressed into a range of used French oak barrels and aged for 20 months before being bottled without fining or filtration.
Aromatically the wine is inky with notes of warm blackberry pie, licorice, and fresh rose hips. On the palate, this wine is extremely bold and full-bodied. With flavors full of dark fruits, fresh damp earth, and black pepper along with refined tannins, this wine can age for decades.
