The majority of the grapes for this wine come from the vineyards 'Umbrico' (planted in 1968) and 'Mecone,' (planted in1988). Only the estate's oldest, specially selected vines are used. The grapes remain on the vine until late October and then lie on straw mats until pressing. Pressing takes place around the holiday season. After fermentation in stainless steel tanks, the wine matures in oak barrels for approximately 12 months, making for a mature and creamy sweet wine.
