The fruit is foot treaded and spends an hour on skins before being pressed to tank for a one day cold settle. Fermentation is conducted in one tank, 8 barriques and one egg without any inoculations, nutrient additions or any corrections to chemistry.
These are the classic Sutter Ranch Vineyard Chenin characteristics. The wine is racked and returned to barrique and tank for a little elevage. The wine is kept clean and is evaluated for ML every four weeks. This is a filtered wine.
