VINEYARD: Wirz Vineyard was planted to Riesling in 1965. Own-rooted, head trained and dry farmed in decomposed granite overlaying limestone at about 1000 ft elevation, this is a true California gem. The 40 acres of Riesling produce about one ton per acre. The head trained vines are little shrubs that produce small clusters with tiny berries. Farmed organically.
FERMENTATION: Whole cluster pressed to tank for an over night settle. Racked to puncheon for an unaided spontaneous fermentation. No malolactic.
VINIFICATION: Four months in used barrels. Racked and returned to barrel October 11. Filtered and bottled January 26, 2017.
